This is a really nice recipe. I always enjoy it because I can quickly prepare everything the night before, wrap it and store in the refrigerator and then pop it in the oven when I get home from work.
Chicken With Sausage & Peppers
Yield: 6 Servings
1 Cut up Chicken (2 1/2 - 3 lbs.)
1 Pound of Smoked Sausage Cut into 1 inch pieces
1 Pound of unpeeled, scrubbed Baby Potatoes
4 Sweet Peppers cut into slices (Any Color or Combination of Colors)
4 Medium Onions, Quartered
Salt, Pepper, Poultry Seasoning and Parsley to Taste
Place Chicken in Casserole dish sprayed with Pam or Large Roasting Pan. Sprinkle with seasoning. Cover and bake at 375 F for 45 minutes. Remove from oven. Add Remaining ingredients. Cover and Return to Oven for approx 30 Minutes or until Sausage and Chicken are cooked through.
