Peanut Butter Bon Bons

These tasty little treats are a holiday tradition around our house. Christmas wouldn't be the same without peanut butter bon bons to enjoy and share. They are one of those things that are a bit time consuming, but well worth the effort. This recipe makes a large batch and they freeze well. Why not get the whole family involved and have some fun!

Peanut Butter Bon Bons
yield: approx 75, depending on the size you make

2 Cups of Peanut Butter (smooth or crunchy)

1 Cup of Margarine or Butter

4 1/2 Cups of Icing Sugar

3 Cups of Rice Krispies

3 Cups of Chocolate Chips or Chocolate Wafers

1 Tablespoon of Parowax (Only required if using chocolate chips)

Combine rice krispies and icing sugar in a large mixing bowl and set aside. Melt margarine and peanut butter over low heat in a large saucepan, stirring constantly. Pour melted peanut butter and margarine over rice krispie mixture and stir until combined. Form into balls, about 1 inch in diameter (1 Tablespoon) and place on a large, wax paper lined cooking sheet. Place in the freezer until hard.
Melt chocalte chips and parowax or chocolate wafers in the top of a double boiler and stir until smooth. Using a fork, dip each peanut butter ball in the chocolate, tap on the side of the pan to remove excess chocolate and place back on cooking sheet. When all bon bons are coated in chocolate, place them in the refrigerator to set and then store in an airtight container in or out of the fridge. I always put them in freezer bags and store them in the freezer.
